Participation in the XIV National Congress on Food Chemistry in Italy

A lecturer of the Department of Professional Education, Restaurant and Tourism Business participated in the XIV National Congress on Food Chemistry in Italy.
Associate Professor of the Department of Professional Education, Restaurant and Tourism Business Maryna Lutsenko is currently a fellow of the MSCA4UKRAINE program (https://sareurope.eu/msca4ukraine/). This direction of activity of the Marie Skłodowska-Curie Fund was formed by the European Commission (https://www.humboldt-foundation.de/en/apply/sponsorship-programmes/msca4ukraine) at the beginning of Russia’s aggressive war against Ukraine in order to help protect the research and innovation activities of Ukrainian scientists. Marina is carrying out her postdoctoral program at the University of Brescia in Italy (https://ricerca2.unibs.it/?p=27627). So, since 2025, she has become a member of the Italian Chemical Society (Società Chimica Italiana) (https://www.soc.chim.it/).
From July 9 to 11, 2025, the XIV National Congress on Food Chemistry (https://chimali.it/) was held at the Bicocca and Ca’ Granda Universities in Milan, in which Maryna Lutsenko participated with a poster presentation on the topic: “Valorization of phosphatide concentrate of sunflower oil as a valuable source of food ingredients and nutraceuticals”.
This study focuses on the popularization of domestic raw materials. At oil-producing enterprises, during the complex processing of sunflower seeds, phospholipids are isolated in the form of phosphatide concentrates (liquid lecithin – PCSO), which create a real raw material base for the production of food lecithins (food additive E322) and biologically active additives based on them. In addition, PCSO can also be a source of multifunctional compounds for the food and nutraceutical industries. The full composition of PCSO was studied, but some indicators, such as the content of antioxidants and pigments (tocopherols, carotenoids), require additional justification. The safety of phosphatide concentrate from sunflower oil (PCS) for food products was confirmed by the absence of radionuclides, pesticides, pathogenic microorganisms and other toxic pollutants, which is important in modern conditions of military and industrial actions in Ukraine.
Participation in such scientific events confirms the high level of professional training of our specialists and contributes to the development of international academic partnership.
