“Modern Technologies and Trends in Culinary Arts”

Teachers and students of the Department of Professional Education, Restaurant and Tourism Business participated in the International Online Seminar “Modern Technologies and Trends in Culinary Arts”.

On March 18, 2025, teachers of the Department of Professional Education, Restaurant and Tourism Business and students majoring in “Hotel and Restaurant Business”, “Tourism and Recreation”, “Professional Education (Agricultural Production, Processing of Agricultural Products and Food Technologies)” attended the international online seminar “Modern Technologies and Trends in Culinary Arts” from the Department of Hotel and Restaurant Business of the Odessa National University of Technology. The event, held in English with the support of La Fondation pour la Formation Hôtelière, presented the participants with a comprehensive overview of innovative culinary technologies.

The seminar was conducted by Master of Culinary Arts Predrag Tošić, Professor of Practical Culinary Classes at the School of Hotel and Tourism Business in Banja Luka, Bosnia and Herzegovina. Under his leadership, the participants were introduced to innovative techniques that are transforming modern gastronomy.

The session covered a variety of topics, including molecular gastronomy, 3D food printing, fermentation processes, and cooking with artificial intelligence. Participants learned about specialized ingredients such as agar-agar, sodium alginate, and lecithin, which are used in spherification and other modern culinary techniques.

The seminar also covered emerging areas such as innovations in plant-based and lab-grown meat production, high-tech grilling methods, and the integration of robotics into the kitchen environment. Visual presentations demonstrated practical applications of these technologies, from fermentation processes to robotic manipulators that work with products.

Faculty and students of the Department of Professional Education, Restaurant and Tourism Business are grateful for this educational initiative and commitment to keeping abreast of global culinary innovations, providing graduates with knowledge of the latest technologies that are changing the hospitality industry.
